Freeze goat cheese for about 15 minutes prior to preparation. Drain the peppers and slice vertically. To make a pocket in the ChicNSteakes, insert sharp paring knife through the side of breast and carefully cut opening to create a large enough pocket to hold stuffing ingredients. Stuff each piece with about 3 - 4 roasted red peppers, a slice of goat cheese, and 3 pieces of fresh basil. Secure seam back together with 3 wooden toothpicks. Sprinkle both sides of the ChicNSteakes with A Salt for all SeasoningsTM. Grill on medium heat about 4-5 minutes per side or until juices run clear and chicken is no longer pink.
